Splitting Bali between two bases means one extra hotel change, in exchange for two quite different settings: a beach stay in Seminyak, then the rice-terrace country around Ubud. Before that, the holiday opens with a city stay in Kowloon.
It suits a first visit to Asia, where a city stop comes before two contrasting Bali bases, and travellers who like to plan their own days. It is less suited to anyone who wants one beach base for the whole stay, or guided sightseeing arranged in advance.

The long-haul flight lands you in Hong Kong, where a busy city makes jet lag easier to work with. By the time you reach Bali your body clock has settled. Ubud comes last because it is inland and quieter, a calmer base before the journey home.
Hong Kong and Bali share the same time zone, UTC+8, and neither uses daylight saving. That is 7 hours ahead of the UK during British Summer Time and 8 hours ahead in winter, so the flight between them brings no clock change.
